Granola Bar Recipe:
Prep Time: 40-50 minute
Cooking Time: 10- 15 minute
Total Time:   60 minute
No of bars:  5 [250 gm ]

Granola Bar Ingredients:
Almond - 16 gm.
Cashew nut - 15 gm.
Pista - 13 gm.
Raisins - 5 gm.
Dried Date - 25 gm.
Pumpkin Seeds - 6 gm.
White Sesame Seed - 12 gm.
Oats - 1 cup
Jaggery/Gur - 80 gm.
Khajur - 30 gm.

How To Make Granola Bar:
1. Finely chop all nuts - almonds, cashew nut, pasta, raisin, dried dates, khajur and
    gur/jaggery.

2. Dry roast oats, nuts-almonds, pista, cashew nut separately in a kadhai/heavy bottom pan.

3. In another heavy bottom kadhai pour 5 tbsp water and then add jaggery.

 4. Melt jaggery on a low flame till the melted jaggery turns glossy and thickens.

5.   Check the consistency by dropping syrup to a bowl of water, it should form hard and cut with a          snap sound.
6.   If the sound comes, then switch off the flame otherwise boil for an  another 1-2 minute.
7.   Then add, ghee in a melted jaggery syrup and then add oats all nuts and khajur.
8.   Immediately pour the mixture onto a greased plate or over butter paper.
9.   Then rolled the mixture with a greased rolling pin into a slightly thick block.
10. Allow to cool for a minute and when its still warm cut into pieces.

11. Lastly, store in an airtight container once cooled completely.
Notes:
  1. Add sugar instead of jaggery, just caramelized the sugar and mix all the nuts.
  2. Add nuts of your choice.
  3. You can also add different cereals like muesli, cornflakes, rice puff etc.
  4. Add seeds like flax seeds, melon seeds, dried cranberries.
  5. Always chopped the jaggery into small pieces so that it melts immediately and cooks evenly.

A soup is an appetizing and easily digestible preparation made from a variety of foods and generally served as the first course in a main meal. It may be served hot or cold. Soup can be classified as a thin or thick soup.

Nutritive Value of Soup

The nutritive value of a soup depends on the ingredients used. Clear/thin soups are of value only to stimulate the appetite at the beginning of a meal,while thick/ cream soups are nourishing as well as appetizing.Thin soups have a very low calorie value as compared to thick soups.

Essentials for the  preparation good cream or thick soup
  1. Mix the vegetable puree and white sauce only at the time of serving.
  2. Both the puree and white sauce should be hot at the time of mixing.
  3. Gradually pour the puree into the white sauce.
  4. If tomatoes are very sour, a bit of sugar may be added to the puree.
  5. Do not heat after the puree has been mixed with the white sauce.
Characteristics of a well prepared soup
  1. The soup should have a natural pleasing colour.
  2. The soup should be mild flavoured and not have very strong flavours.
  3. The soup should not be greasy
  4. Cream soups should be as thick as cream
  5. Other soups should be slightly thicker than juice
Garnishes and accompaniments to soups

Garnishes eg, croutons, grated cheese, butter, cream, saute mushrooms, onion rings,chopped mint and diced vegetables help to make a soup appear more attractive as well as more nutritious and tasty.

Accompaniments to a soup are crisp bread sticks, thin toasted bread,dinner rolls etc.

How to make interesting soups with instant soup powders

Soup powders and cubes are easily available in the market.

Tomato soup powder
Cook as per instructions on pack.Boiled noodles,steamed vegetables like carrots, peas and sauteed mushrooms may be added.

Vegetable Soup Powder
Cook as per instructions on pack. Add steamed or sauteed vegetables like beans, peas, capsicum, cabbage to it.

Tomato Soup Recipe:

Cuisine - Indian
Course - Starter
Prep time - 20 minutes





Ripe Tomato: 200 gm.
Onion: 20 gm.(1/2 small)
Carrots: 20 gm.(1/2 small)
Water or vegetable stock:  1/2 Cup
Bay Leaf: 1
Cinnamon: 1 Small piece
Black pepper: To taste
Salt: To Taste

For Garnishing:
Croutons
Butter
Chopped Coriander Leaves

How to make:

  1. Chopped Tomato, Onion and Carrot and put into the sauce pan/kadai/heavy bottom pan along with water or stock. Bring to a boil. Simmer for another 15-20 minutes on a low heat.
  2. Remove the whole spices. After cool down, mix all this into a blender. 
  3. Pass through a sieve.
  4. Heat again and bring to a boil.
  5. Put chopped coriander leaves and small cube of butter.
  6. You can also add croutons.

Note:

  1. To make croutons cut bread into cubes and either you deep fried or baked into OTG at 160 degree for 8 to 10 minutes or you can also dry roast bread cubes into heavy bottom pan.
  2. You can make more healthy and testy soup by adding seasonal vegetables like corn(boiled), peas(boiled), mushroom(saute), broccoli(boiled).
  3. You can also add boiled noodles.

Jaipur ki Pyaz Kachori recipe

Cuisine- Indian
Course- Snack
Prep time- 20 minutes

   Salt:1/2-1 Tsp

   For filling:
   Onion: 1/2 Kg.
   Potato: 3-4 medium size (Boiled and Mashed)
   Besan: 3 Tbsp(Dry roasted)
   Coriander seeds:  1 Tsp (crushed)
   Coriander powder: 2 Tsp
   Mustard seeds: 1 Tsp
   Cumin seeds: 1/2 Tsp
   Hing: 1/2 Tsp
   Salt: To Taste
   Amchur powder: 3 Tsp
   Green Chili: 2 (Finely Chopped)
   Ginger garlic paste: 1 Tbsp
   Red chili powder: 2 Tsp
   Garam masala: 1/2 Tsp
   Sugar: 1 Tsp
   Oil: For frying

How to prepare dough:
  1. Combine all ingredient-Maida, Oil, and Salt in the deep mixing bowl and knead into the stiff dough using water and keep aside at least for 15 minutes.
  2. It will be better if you covered the dough with wet muslin/cotton cloth.
How to prepare pyaz kachori filling:
  1. Chopped the onion finely.
  2. In a pan or kadhai, dry roast besan and keep aside in a bowl.
  3. Heat 3 tbsp oil in a kadhai or broad pan, add crushed coriander seeds, cumin seeds, mustard seeds, hing and saute for a half minute.
  4. Now add coriander powder and saute for again half a minute and add chopped onion and salt.
  5. Saute onion continue until light brown.
  6. Add ginger garlic paste, finely chopped green chili and red chili powder and saute again for 1 minute.
  7. Add boiled potato (It will be better if you use grated potato), roasted besan and sugar.
  8. Mix well all ingredients and cook for again 3-4 minutes and add amchur powder.
  9. Remove from heat and let it cool.
  10. Add 2 chopped onion and mix well.
  11. Now take small ball size dough and fill onion masala and roll out.
  12. Deep fry the kachori on low-medium heat.
  13. Enjoy the kachori with the Green chutney or mayonnaise.

Sore thorat remedies

A sore throat is a very common problem in the monsoons. A sore throat refers to pain, itchiness, or irritation of the throat. Throat pain is the primary symptom of a sore throat. It may get worse when you try to swallow, and you may have difficulty swallowing food and liquids. Flu season often gets with it fever, cold and coughing. The constant itch caused by a sore throat is often agitating, especially if it hinders your productivity at work and home.
Here are some home remedies you can follow to get rid of this condition:

HOW TO GARGLE

Gargles: Our grandmother’s favourite cure for any sore throat infection, gargles are the best and most effective way of curing the sore throat.  A glass of lukewarm water with a pinch of salt will help increase the blood flow to the pharyngeal region which will eventually wash off the infection.
Warm liquids: Teas such as cinnamon tea, ginger tulsi tea, lemon honey tea or simply a cup of desi masala chai can do wonders for your throat. As the throat is choked due to infection, warm liquids can help relax this area.

Soft diet: Eating foods lighter on your stomach will be helpful. Along with this, foods which won't hurt while going down your throat will also be extremely useful. You can steam an apple and consume it with honey, or have mashed khichdi or dal with crushed vegetables for best results.

Steam: You can add a cough suppressant in your steam and inhale it for the speedy recovery. This will open up your nasal and throat area and help you breathe properly.

Throat sootheners: During a sore throat condition, our throat tends to become dry and hence causes numbness in the throat area. Taking cough lozenges, menthol or eucalyptus oil lozenges can help you heal your throat faster.

Local heat: a Sore throat also brings with it pain. There are times when our throat gets spasms of pain or while we eat a hard food, our throat starts to pain. At times like these, you can apply a heating pad or a hot towel around your neck give relief to the delicate aching area.

Avoid going to public places as the infection can increase because, during the flu season, cold, cough and fever are extremely contagious and can worsen your condition.

Get medical attention if our sore throat lasts for more than 5 days, your neck starts to swell or you get body pains and cannot handle the aches.

AYURVEDA HOME REMEDIES

If taken care of at an early stage, it can be cured instantly with some simple and natural herbal remedies.
  1. Salt and Warm Water Gargle
  2. Ginger, Honey, Lemon and Water
  3. Garlic
  4. Turmeric Milk-1 cup of hot milk,1/2 teaspoon dried turmeric powder / 1-inch piece of fresh turmeric. You can also add up smashed ginger and honey or jaggery to make it more effective and soothing.
  5. Ginger, tulsi, cinnamon and lemon tea-In a condition of a sore throat this tea give you relief from this.

Ingredients:

    1/2 cup-Water
    3-4 leaves of Tulsi
    1/2 tsp of cinnamon powder or 1/2 inch of cinnamon
    1/2 inch grated ginger
    1/2-1 tsp of lemon juice
    1/2 tsp of sugar/jaggery powder

How to make:
  1. Boil water into the saucepan. Add tulsi leaves, cinnamon powder, ginger.
  2. Boil water until it reduces to half then add sugar or jaggery.
  3. Switch off the flame and add lemon juice.

Weaning Foods
Weaning is the process of gradually introducing foods other than breast milk into the child's feeding schedule. The growth rate in infancy being high, breast milk is not enough to meet the child's increasing needs for energy and protein. Milk is a poor source of iron and also provides a small amount of Vitamin C. They are sufficient to meet an infant's need until the three months of age.
     
It is important to introduce foods rich in iron, vitamin C, energy and protein to the child after completing three months. They are called weaning foods

Weaning should be a gradual and slow process so as to make the child adapt to the new foods. The consistency and amount of weaning foods should be slowly modified according to the increasing age of the child.

For infants around the age of 4-6 months, liquid supplements are given. These include soups, juices, and animal milk

For infants of 6-8 months, semisolid supplements which are well cooked and mashed or pureed like mashed or pureed vegetables, well cooked mashed pulses, khichri and porridge etc

For older children, solid supplements that are cooked and finely chopped or lumpy, are suitable like well-cooked pulses, vegetable khichri, stewed fruits etc.


Important points should be considered during weaning are:

  1. Consistency should be slowly changed from liquid to semisolid and then solid supplements.
  2. The amount should be gradually increased.
  3. Only one new food should be introduced at a time. Only when the child gets used to it, another weaning food should be introduced.
  4. Force feeding should be avoided if the child shows a persistent dislike for a particular food.
  5. Use locally available ingredients while preparing a weaning food.
  6. Only salt should be used for seasoning.
  7. Although egg yolk may be started at the age of 4-5 months, egg white should not be given until the infant is 8-9 month old as it is likely to cause allergy in some children.
  8. The fibre content of the weaning food should be low. Foods should be well cooked to soften the fibre.
  9. Highly flavoured foods should be avoided.

Mango kheer recipe

Rice kheer is a very common pudding made in almost every home of India especially during special occasions like in north- navratri, janmashtami, in south- pongal and in east- chhath puja. For me my favourite version of rice kheer is mango rice kheer.  This has the same taste as the ice cream when it served chill.

Mango kheer is a easy to make dessert ready with ripe mango pulp,full cream milk,rice/vermicelli.

Cuisine- Indian
Course- Dessert
Cooking time- 40-50 minute
Serving- 4

Ingredients:

1 litre- full cream
1 cup- mango pulp
1/4 cup- mango pieces
1/4 cup- rice(broken basmati)
5 tablespoon- sugar
1/4 teaspoon- cardamom powder
3/4 cup- mix nuts (almonds,raisin)

How to make:
  1. Firstly in to the heavy bottom kadahi or in pan pour full cream on high flame until it boil.
  2. In a mean time soak rice in to the water.When milk boils reduce flame to low to medium.
  3. Pour rice in to the milk and stir continuously until rice cooked and milk reduce to half.
  4. Mix sugar and cardamom powder.
  5. Now mix small mango pieces in to the kheer as it enhances the taste of kheer.
  6. Now switch off the flame.
  7. Cool down the milk and mix mango puree in to the milk.
  8. Mix nuts in to the mango kheer.
  9. Serve chilled and garnished with almond and small mango cube.

Assemble time- 5 minutes
Total time- 15 minutes
Serving- 2
Main ingredients- ripe mango and papad


Ingredients:
Ripe mango- 2
Cucumber- 1
Onion- 1(big)
Mint leaves- a handful
Masala papad- 2
Salt- according to taste
Red chilli powder- 1/2 tsp
Roasted cumin powder- 1 Tsp
Black salt- as per taste
Chaat masala- 1/2 tsp


How to make:
  1. In a large mixing bowl, chopped mango, cucumber, onion, mint leaves.
  2. Now mix salt, red chilli powder, roasted cumin powder, black salt and chaat masala with above ingredients into the mixing bowl.
  3. Now roast papad on medium flame. and immediately make a shape of Katori with the help of a small bowl.
  4. Take one Katori and fill up with mango mixture.
  5. Garnished with the mint leaves and served as a side dish or as a chatpata snack.
